When it comes to spending quality time with my darling daughter, there are a number of things we love to do and cooking is definitely one of them. At the age of 5, she was able to make cupcakes and roll rotis (Indian homemade tortilla), of course not the perfect round shape but pretty close. She always loved to help me in the kitchen even when she was two. I used asked her to help me with plucking the cilantro or parsley leaves to improve her fine motor skills and that used to occupy her for a good 20-30 minutes. Over the past several years she has learned to cook so many things, her curiosity with food and experimenting with presentation makes my heart warm. I’m one proud mamma!!
During spring break, we decided to make the delicious semi-homemade dessert for all her friends for a play-date. Mind you, at 7 years, it’s not about your average basics anymore. It’s all about going above and beyond with your creativity and presentation. Yes! At 7 years! [Insert an eye roll emoji].
Over the years with many trial and errors, I have found a shortcut to making really REALLY delicious and chewy brownies at home from a box. Go ahead call me a cheater! But I will tell you something, these tastes like the ones your grandma makes from scratch that you just can’t stop eating. And, out of all the boxes I have tried so far, I love Ghirardelli’s the most. This is not an advertisement; they really are one of the best. If you can find their double chocolate chip cookie box, nothing like it because it tastes great.
Here’s my shortcut to make those chewy delicious brownies that taste like homemade ones.
Mix everything with the addition or modification of ingredients from the chart given above and bake as per the instructions on the box.
Once the brownies are ready, make square pieces depending on the size of your party cups. Try to fit one piece into the cup and see if you need to cut them smaller or larger in size.
I found these disposable party cups at a party supply store. Don’t forget to pick up those baby spoons to go with your cups or it will be difficult to eat with a regular large spoon if you decide to use them. Alternatively, you can skip putting them in the cups altogether and use cupcake liner or just arrange them on a party tray in equal distance for best presentation.
Fill the cups with frosting and top it with the maraschino cherries. We love homemade frosting better than the boxed one. Homemade frosting is really easy and also fun to make for little girls (butter + sugar + vanilla + milk).
You can substitute maraschino cherries with raspberry for a healthier option.

- A ready mix box of brownie, preferably Ghirardelli
- Homemade or ready to use frosting
- Maraschino cherries (substitute with raspberries)
- - Bake brownies as per the instruction on the box. Substitute butter for oil and double the amount. Also, add one extra egg and replace water with equal amount of milk.
- - Add 1/4 tsp. all-purpose flour (optional).
- - Cut brownies into square bite size pieces.
- - Add square pieces of brownies in the bottom of the cups.
- - Now add frosting on top of brownies.
- - Top it with maraschino cherries or raspberries.
- These cups are good in the fridge for 2-3 days.
